WHere is a simplified interpretation of a beverage featured on a new drinks list. This is a batch premix which is loaded with flavours of a holiday season, which makes it excellent for a celebration. Any leftover cordial you can use for morning drinks, desserts, or to make additional servings of this cocktail.

Serves 10 people
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
For the Syrup: Put the listed items in a saucepan, heat until it reaches a light boil, agitating so the sugar melts. After that, take off the stove allowing it to reach room temperature entirely. Pour to a sterilised bottle, close it and store in the fridge, where it will keep for around four weeks.
To make Batch Mix: Pour the specified liquid ingredients into one sizeable container, leave to sit for 60 minutes, then strain preferably using a fine cloth, to ensure it's completely strained.
To serve: Measure 85ml from the premix to a stirring glass packed with ice, gently stirring lightly for one minute until cold. Strain to a frosted cocktail glass or a similar vessel, decorate with a few cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
